One-bowl banana bread with strawberry gum & cinnamon myrtle recipe

This one-bowl banana bread is quick to make and packed with naturally sweet and comforting flavours – perfect for breakfast or snacks.

This scrumptious, hearty bread requires minimal equipment and minimal time! The bananas impart sweetness, while the strawberry gum and cinnamon myrtle add a touch of eucalyptus. To sweeten things up a bit, we have added a little brown sugar and maple syrup.
Serves 8 - 10
Ingredients to make this one-bowl banana bread
3 medium or 2 large ripe bananas
½ teaspoon vanilla extract
2 eggs, at room temperature
2 tablespoons coconut oil
¼ cup (60 g) brown sugar, packed
3 tablespoons maple syrup
¼ cup (25 g) desiccated coconut
2 teaspoons baking powder
½ teaspoon cinnamon powder
¼ cup (60 ml) almond milk, or milk of your choice
1 cup (150 g) plain flour
1 cup (95 g) rolled oats
1 teaspoon strawberry gum leaves
1 teaspoon cinnamon myrtle powder

How to make one-bowl this banana bread recipe
Preheat the oven to 200°C. Line a 24 cm x 13 cm loaf pan with baking paper. In a large bowl, mash the bananas with a fork. Add the vanilla, eggs, coconut oil, sugar, maple syrup, desiccated coconut, baking powder, cinnamon and almond milk, whisking vigorously by hand to combine.
Add the flour, oats, strawberry gum and cinnamon myrtle and mix to combine. Pour the mixture into the lined loaf pan and bake for 45–60 minutes. When ready, it should feel firm and be golden brown on top.
Let the banana bread cool completely before cutting or it will be too soft to hold its form. Serve with butter and honey, or as is. Store leftovers in a covered container for up to 2 days.
To keep for longer or for lunchbox treats, slice and freeze individual serves.

Wrap individual portions in plastic wrap and place them all in a labelled ziplock bag, keeping everything together and easy to find.
