Beef pad see ew is easier to make than you think

Weeknight dinner just got a major upgrade with this recipe that’s packed with Thai street food flavour and ready in a flash.

Ideal for a quick weeknight dinner or a special meal, this pad see ew captures the essence of Thai street food: tender beef, chewy noodles and a rich, sweet-and-salty sauce. 

The bicarbonate of soda (baking soda) helps to keep the meat tender and really is a game changer for beef stir-fries in general.

Ingredients to make beef pad see ew recipe

Serves 4

Prep time: 10 minutes, plus marinating

Cook time: 20 minutes

1 tablespoon soy sauce

1 teaspoon bicarbonate of soda (baking soda)

260 g (9¼ oz) sirloin, flank or skirt steak, cut into 2 mm (1/16 in) thick slices

400 g (14 oz) fresh or 200 g (7 oz) dried thick rice noodles (see Tip)

2 tablespoons garlic-infused olive oil

150 g (5½ oz) Chinese broccoli (gai lan) or broccolini, stems cut into 2 cm (¾ in) lengths on the diagonal

1 egg

Sauce

100 ml (3½ fl oz) soy sauce

¼ cup (60 ml) oyster sauce

1 tablespoon white vinegar

1 tablespoon soft brown sugar

How to make beef pad see ew recipe

Combine the soy sauce and bicarb soda in a bowl. Add the steak, mix and leave to marinate in the fridge for 1–2 hours. Cook the rice noodles according to the packet instructions (if using dried). 

Drain and rinse under cold water. While the noodles are cooking, make the sauce by mixing all the ingredients in a bowl. Add half the sauce to the cooled noodles and mix to coat. In a large frying pan or wok, heat 1 tablespoon of the garlic oil over medium–high heat and fry the beef slices for 1 minute on each side. 

Don’t move them around too much in the pan; you want to get a nice char on them. Fry until the meat is almost cooked through, then remove from the pan. Add the remaining oil to the pan and cook the broccoli for 4–5 minutes until it begins to soften, then push it to one side and crack in the egg. 

Scramble the egg and mix it with the broccolini, then remove from the pan. Add the rice noodles to the pan, but don’t stir immediately. Allow the noodles to sit in the hot pan for 1 minute to get a bit of colour on them, then return the beef, broccolini, egg and remaining sauce to the pan. 

Toss briefly to combine, then serve.

Citro food tip

Fresh rice noodles will elevate this dish to a truly authentic experience. You can usually find them in the chilled section of the supermarket, or definitely in an Asian grocery store.
