High fibre and high flavour Tex Mex tortilla recipe

Elevate your Tex Mex night with these healthy high-fibre tortillas stuffed with the richness of the tangy zest of Mexican spices.

Ingredients for high fibre Tex Mex tortillas

2 eggs

5 tbsp cream cheese

1 tbsp psyllium husk

1 tbsp coconut flour

1 tbsp olive oil

250 g plant based soy mince (usually available in the frozen section at the supermarket) or beef mince

1 tbsp Mexican spice

salt and pepper to season

¼ cup water

¾ cup grated cheddar

cheese

mashed avocado, lime and

cherry tomatoes to serve

Method to make high fibre Tex Mex tortillas

Place the eggs and cream cheese in a bowl and beat with a hand mixer until smooth and fluffy. Fold in the psyllium husk and coconut flour until you have a smooth batter. Let sit for a minute or so until the batter thickens.
Heat a griddle pan over medium heat and add 2 tablespoons of batter for each tortilla. You should be able to make two for each person. Cook for 2–3 minutes each side until golden. Remove from the pan and set aside.
Heat a frying pan over medium heat and add the oil, soy mince, Mexican spice, salt and pepper and water and simmer for about 8–10 minutes until the liquid is absorbed and mince is cooked through.
Divide the mince between the tortillas, top with grated cheese, a dollop of mashed avocado, a squeeze of lime and some chopped cherry tomatoes.

Citro food tip

Want a vegan version? Sub the cream and cheddar cheese for vegan options and the eggs for 2 tablespoons of aquafaba. Aquafaba is the liquid found in a can of chickpeas or the cooking liquid left after boiling chickpeas. It’s a versatile vegan substitute for egg whites in cooking and baking. When whipped, aquafaba can create a foam similar to that of beaten egg white.
